- Add water sugar and lemon zest in non stick pan
- Stir until sugar dissolves let it bubble
- Sieve the mixture to remove lemon zest
- Add in blue berries on gentle simmer
- After some time the skin will start falling off
- Turn heat to high and let it cook until reduces to almost half
