  • Saute garlic and onion in pressure cooker with 1 tsp olive oil, salt and pepper.
  • Add whole chicken and 4 cups water to pressure cooker and cook on high covered to reach pressure. Once at pressure turn down to low heat and cook under pressure for 45 mins.
  • After 45 mins, turn off heat and allow pressure cooker to depressurize naturally. Away from heat.
  • Remove bones from stock.
  • Add all other ingredients to pressure cooker except chips, cheese, sour cream and avocado. Cook on high until pressure is reached. Once pressure is reached, turn heat to low for 20 mins.
  • After 20 mins, allow to depressurize naturally.
