- Heat oil in medium sauce pan on low heat. Mince onion and chicken into small pieces. Add chicken, onions, taco seasoning and garlic to oil. Cook until onions are translucent (5 minutes).
- Next, simply add the rest of the ingredients, stir well and simmer on low heat for 30 minutes.
- Garnish with tortilla strips and your choice of cheese! Add more or less hot sauce to your liking. I've used a packet of Velveeta cheese in place of the cheese soup. Add more chicken if you like as well. It's important to mince the onions and chicken into small pieces. This soup freezes well for later.
