Ingredients
- For the meat filling
- 12 oz impossible plant base beef
- 1 medium carrot chopped or 1cup frozen carrots
- 1 cup chopped green or red bell pepper
- 1 cup chopped onion
- 1 cup chopped portobello mushrooms
- 1 clove chopped garlic
- 1 tbsp tomato paste
- 2 tbsp olive or avocado oil
- 1 tsp chilli powder
- 1/2 tsp dried rosemary
- 1/2 tsp dried or fresh parsley
- 1/2 tsp salt
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp ground coriander
- 1/4 tsp cayenne pepper
- 1/4 tsp black pepper
- 1/4 cup vegetable broth
- 1 cup frozen sweet peas
- For the sweet potato filling
- 1.5 lb sweet potato peeled and cubed
- Dash cinnamon
- 1 tbsp Ghee or butter I used ghee
- 1/2 tsp chilli powder
- Salt and pepper to taste

Method
- Preheat oven to 375. Start with sweet potato filling You can bake or steamed the potatoes. I boiled them for 10minutes or until soft. Don't over cook.
- While potatoes are baking or cooking prepare the meat filling. With the oil First saute onions for 1min, then add garlic cook until fragrant. Then add bell peppers, carrots, and Mushroom. Cook for 2mins while stirring occasionally.
- Add impossible beef and let cook for 2min occasionally stirring, then add salt,pepper, coriander, paprika, chilli powder,cayenne pepper, cummin, rosemary and parsley stir and add green peas and vegetable stock and let simmer for 15mins stirring occasionally or until liquid is gone and beef is fully cooked.
- While the meat is cooking work in the potato filling. Poor off excess water from the potatoes if steamed or remove from baking tray and in a blender add potato, Ghee, cinnamon and chilli powder. Blend for 30secs to 1 min or until smooth Take care not to burn yourself
- In your 10 inch skillet or a baking dish add your meat filling to the bottom of the dish, then spread potato on top. I cooked the meat in my skillet so I just spread the potato a top of it and baked it in the skillet. Tht one pot life
- Placed in your oven and bake for 20 mins at 375.
- Remove from oven and let it sit for 10mins or until cool. However I waited 5mins I was hungry. 😉 ENJOY
